Roast Pork dinner

Sunday August 7 is New Zealand Roast Day. The Sunday Roast is a traditional kiwi meal. Its basically served with roast meat with roast potato, vegetable and gravy.

After much request, Janice decided to make roast pork for dinner. We bought a two kilogram pork shoulder with the rind well-scored. To make crisp crackling rind, we brush some olive oil and some salt on it.

The pork was left in the 160 degree oven for about two hours. We also had pumpkin, potatoes and some apple to go along in the roasting dish.
The pork was left 10 minutes before cut. Roast pork with cracking rind, mash potato, boil beans, carrot, pumpkin and some apple sauce. A simple dinner for the day, yummy!!
